Vegan Baby Zucchini Recipe

The baby zucchini that we grow zucchini in our organic vegetable garden is so delicious. I made this baby zucchini recipe many years ago when we were searching for the most delicious, easiest recipe to cook zucchini. I have brought this to pot luck dinners and friendly gatherings and everyone just loves it.



Ingredients:
6 Baby zucchini
2 tbsp Olive oil
1/4 tsp Cracked pepper
½ tsp Sea Salt (or regular salt)
½ tsp Garlic powder or garlic salt (if using garlic salt then omit the sea salt above)

Directions:
Spray Pam or smear cooking oil in bottom of glass oven safe dish (as shown in picture) or baking pan. Trim ends off of zucchini and slice lengthwise as shown in the picture. Arrange zucchini with cut side down in the baking pan. Drizzle olive oil over the top of the zucchini. Evenly scatter the pepper, salt and garlic on top of the zucchini. Cover pan with aluminum foil and place in oven for about 20-30 minutes at 350 degrees. Test the zucchini with a fork, if the fork slides in easy then it is done.

Quick Variation:
This recipe can also be made in the microwave by using glass a bowl and covering it with cling wrap. Place in microwave for about 7-10 minutes and test using the fork method. Sometimes when I'm in a hurry I put this in the microwave first then finish it off in the oven by removing the cling wrap, either way it's delicious and very healthy!
