Vegan or Vegetarian Tofu Dill Dip

A delicious vegetarian dill dip that is high in iron and can be served with crackers or raw vegetables.

Ingredients:
1 peeled cucumber
1 pound tofu
1 teaspoon dill weed
2 tablespoons lemon juice
¼ cup fresh parsley or 1 tablespoon dried parsley
½ teaspoon garlic powder
Salt to taste

Directions: place all ingredients into a blender or food processor, blend until creamy.
Serving size: 5
Nutrition per serving: 77 calories, 5 grams fat, 8 grams protein, 3 grams carbs.
